If there’s one dish that defines Pakistani cooking, it’s Chicken Karahi — rich, spicy, and full of desi aroma that instantly makes your mouth water. This recipe brings that authentic restaurant-style karahi flavor straight to your kitchen. Whether you’re cooking for your family, friends, or just treating yourself, this dish will never fail to impress.
Ingredients You’ll Need
- ½ kg chicken (bone-in preferred)
- 3–4 ripe tomatoes (finely chopped)
- 1 medium onion (optional, thinly sliced)
- 2 tbsp ginger garlic paste
- ½ cup oil or ghee
- 1 tsp red chili powder (adjust to taste)
- 1 tsp crushed red chili flakes
- 1 tsp salt (or as needed)
- ½ tsp turmeric powder
- 1 tsp cumin seeds
- 1 tsp garam masala
- 2–3 green chilies (slit)
- Fresh coriander leaves (chopped)
- A small piece of ginger (julienned for garnish)
Step-by-Step Method
🔹 Step 1: Heat the Base
In a karahi (wok), heat oil or ghee on medium flame. Add cumin seeds and let them crackle for a few seconds to release their aroma.
🔹 Step 2: Add Chicken
Add chicken pieces and sauté until they turn light golden on all sides. This seals in the flavor and gives the meat a nice color.
🔹 Step 3: Add Ginger-Garlic
Add ginger garlic paste and cook for 1–2 minutes until the raw smell disappears.
🔹 Step 4: Add Tomatoes & Spices
Add tomatoes, salt, red chili powder, crushed chili flakes, and turmeric.
Mix well and let it cook until the tomatoes soften into a thick masala.
Tip: Don’t rush this step — the slower you cook the tomatoes, the richer your karahi flavor will be.
🔹 Step 5: Bhunai (The Secret Step!)
Now comes the key part! Cook on medium-high heat for 5–7 minutes while stirring continuously. This process, called bhunai, gives your karahi its deep, restaurant-style flavor and color.
🔹 Step 6: Add Green Chilies & Garam Masala
Once the oil separates, add green chilies and garam masala. Cook for another 2 minutes so everything blends perfectly.
🔹 Step 7: Garnish & Serve
Turn off the flame and garnish with fresh coriander and julienned ginger.
